AKITAKOMACHI JAPANESE RICE

Akita Komachi is a Japanese rice variety that originated in Akita Prefecture. This rice was also the inspiration for the Shinkansen train of the same name that passes through Akita Komachi. It has a slightly chewier and lighter flavor than Koshihikari. Even when eaten cold, the flavor does not spoil, so it is suitable for cold dishes such as sushi.
